the thing which = what と置き換えることができます。
● The thing which he told you is important.
= What he told you is important.（彼があなたに言った事は重要だ。）
関係形容詞 what + 名詞 = all the ～, any ～ （～する全ての、どんな～でも）と置き換えることができます。
● He gave her what little money he had.
= He gave her all the little money he had.
（彼は持っていたわずかなお金を彼女に全てあげた。）
what の慣用句でよく使われるものをまとめてみました。
① what S is （現在の S）, what S was, what S used to be （過去の S）
● My father has made me what I am. （父が現在の私にしてくれた。）
● She isn't what she was. （彼女は昔の彼女ではない。）
② what (we, they, you) call = what is called （いわゆる）
③ what is + 比較級～ （さらに～なことには）
● It became dark, what was worse, it began to rain.
（暗くなってきた｡ さらに悪いことに、雨が降り出した。）
④ A is to B what C is to D （AとBの関係はCとDの関係に等しい。）
● Leaves are to the plant what lungs are to the animal.
（葉と植物の関係は、肺と動物の関係に等しい。）
⑤ what with～ and what with… ～やら…やらで
● What with the bad weather and what with the smog, we couldn't see anything.
（悪天候やら霧やらで、何も見えなかった。）
